My new years resoulation....Eat More Cheese

Now really  I know it is one I can keep.  We all have others but usually by Feb we are saying well maybe better luck next year and we give up.  So  I am being realistic  and doing one I know I can keep.  I mean you know cheese is good on everything.  My hubby , my son's and myself of course Love cheese, and I am thinking I will try some this year that I have never tried before. So now a recipe share.

I was watching Paula Deen yesterday  and she was doing a show on grilled chicken and grilled potatoes, well I don't have a grill but I was intrigued on the potato technique so I was like now I am going to have to roast these in the oven so how can I kick these things up and then it came to me.  Now Paula's part was this, you wash your potatoes and cut them into 1 inch pieces width wise.  Then you boil them for 6 min  and Paula said only 6 min because you will finish cooking them on the grill or for me in the oven

Gouda and caramelized onion topped potatoes:

Ingredients:

4 baking potatoes
2 large onions
1 block of gouda cheese
1 stick of butter
salt

So after cooking your potatoes for 6 mins you drain the water  and place them on a cookie sheet
Melt some butter in the microwave  and brush the tops with the butter and a little salt.  Place in a 375 degree oven for 15 min
While the potatoes are baking cut you onions  and with a 1/2 stick of butter and a frying pan  you cook the onions on a med heat,  they will soften and turn a light brown. 
Take the potatoes out  and flip them adding more butter and salt. for 5 to 10 more min
Take your block of gouda and shred it.

I then took the potatoes out, ad put the cheese  and the caramelized onion on top and placed back in the oven for about 3 min  so the cheese could melt.  Top with sour cream  and my hubby said  they were like little potato steaks.

  1. Love the resolution to eat more cheese this year, my husband is always trying to get me to try new cheese, so I like that you are doing this, oh and don't you just love anything Paula dean makes, its always a stick of butter in everything...YUMMY!!!!!
